IMG_3332This salmon is packed with a kick! Since it is a bit on the spicy side, you will not need a lot of the sauce.  You know what they say, a little goes a long way. But feel free to adjust to your spice level…if you are not about the spice, tone back on the sriracha. But if you’re wild and crazy and like things hot, try doubling the sauce. This recipe is so easy to prepare on the stove, and its great grilled too! My husband is not a fish eater, but I’m going to convert him. (Shhh!!) With something this yummy, maybe he won’t even notice it is salmon, ya think? Who wouldn’t love the great combination of lime, sriracha, garlic and honey? The flavors balance one another perfectly.  Anyway, I love salmon, it’s good for you, and this recipe is sooo easy. Its a win, win all the way around. 

Spicy Lime Salmon

Ingredients
  1. 4 salmon fillets
Marinade
  1. 2 teaspoons olive oil
  2. 1 tablespoon freshly squeezed lime juice
  3. ½ teaspoon chili powder
  4. 1 teaspoon minced garlic
  5. ¼ teaspoon black pepper
Sauce
  1. 1 tablespoon freshly squeezed lime juice
  2. 1 tablespoon sriracha
  3. ¼ teaspoon garlic powder
  4. 1 tablespoon honey
  5. t tablespoons cilantro, roughly chopped or 1 teaspoon dried cilantro
Instructions
  1. Whisk the marinade ingredients together. Place salmon and marinade in a zip lock bag , seal, and chill for a least 30 minutes or overnight.
  2. Remove salmon from bag and discard marinade. Spray a nonstick skillet with cooking spray and cook salmon over medium-high heat 6-8 minutes on each side until salmon begins to blacken very slightly and is flakey. If salmon has skin on, carefully peel skin off after cooking and discard.
  3. While the salmon is cooking, whisk together sauce all sauce ingredients except for cilantro. Heat in a small sauce pan over medium heat and bring to a boil, then reduce to a simmer. When salmon is cooked, drizzle sauce over salmon and sprinkle with chopped cilantro.
Notes
  1. Suggestion: serve with cooked rice or steamed vegetables.
