grilled cajun lime chicken

Mmmm! You gotta love grilling in the summer.  Nothing beats the barbequed taste of food that has been thrown on the grill.  I love the flavor of lime and it brings just the right balance to this Cajun chicken.  Cilantro gives it a nice, extra zing, but sometimes in a pinch I add parsley.  Just slap this chicken on the grill with some corn on the cob, and  you’re taste buds will be saying mmmm, delicious!

 

 

 

Grilled Cajun Lime Chicken

Ingredients
  1. 4-6 boneless skinless chicken breasts
  2. juice of 3 limes, plus additional lime wedges for serving
  3. Chopped cilantro or parsley, if desired
  4. Cajun Rub
  5. 1 teaspoon salt
  6. 1 teaspoon garlic powder
  7. 1½ teaspoon paprika
  8. ½ teaspoon pepper
  9. ½ teaspoon onion salt
  10. ½ teaspoon cayenne pepper
  11. heaping ½ teaspoon dried oregano (you can substitute Italian seasoning)
  12. ¼ teaspoon red pepper flakes
Instructions
  1. Grease and preheat grill to medium-high. In a small bowl whisk together all spices.
  2. In another small bowl, add the lime juice.
  3. Dip chicken in the lime juice, and turn to coat. Sprinkle Cajun rub all over all of the chicken being sure to coat all sides.
  4. Grill chicken for 8-10 minutes on each side until cooked through. Serve with lime wedges and freshly chopped cilantro or parsley if desired.
