img_5533img_5520For as long as I can remember, nachos have been one of my all time favorites. From a midnight snack to baseball games, gotta have me some nachos with cheese. Is it okay to make nachos for dinner? You betcha! You got your dairy, your protein and your veggies. Isn’t it great being mom?…All powerful, and saying it’s okay to have nachos for dinner. The fondue pot keeps the cheese warm. All the toppings are a la carte so everyone is able to make their own cheesy creation just the way they prefer. The conversation flows and the dinner disappears. SUPER NACHOS are a family favorite for sure!

 

Super Nachos Fondue

Ingredients
  1. 2 bags tortilla chips in 2 colors or 2 flavors
Pico de Gallo Salsa
  1. 4 tomatoes seeded and chopped
  2. 1 jalapeño pepper seeded, finely chopped
  3. 1 small white onion, chopped
  4. 1/4 cup cilantro
  5. salt
Beef Topping
  1. 1 pound ground sirloin
  2. 2 cloves garlic, chopped
  3. 1 small onion, chopped
  4. 1 jalapeño pepper seeded, finely chopped
  5. 1 t salt
  6. 1 1/2 t dark chili powder
  7. 1 1/2 t ground cumin
  8. 2 teaspoons cayenne pepper sauce
Cheese Sauce
  1. 2 T butter
  2. 2 T flour
  3. 2 cups milk
  4. 2 1/2 cups pepper jack cheese or cheddar or a mixture of both, shredded,
Additional toppings to choose from
  1. Sour cream
  2. Chopped scallions
  3. Lettuce
  4. Chopped black olives
  5. Chopped cilantro
  6. Sliced avocado
  7. Hot pepper sauces
Instructions
  1. Combine salsa ingredients in a bowl and set aside.
  2. Heat a medium non-stick skillet over medium high heat. Add garlic, onion and peppers to the pan and sauté 2 minutes, then add meat and crumble with wooden spoon. Season meat with salt, chili powder, cumin and cayenne pepper sauce. Cook meat 5 minutes, and reduce heat to low.
  3. In a fondue pot or a medium sauce pan, melt butter and add flour to it. Cook flour and butter 1 to 2 minutes over moderate heat, then whisk in milk. When milk comes to a bubble, stir in cheese with a wooden spoon. Keep the fondue pot at lowest setting or remove cheese sauce from the heat to serve.
  4. Arrange a mixture of 2 varieties of corn chips on each individual plate.
  5. Let everyone get creative by adding their own toppings of cheese sauce, beef, pico de gallo. and extra extra toppings of their choice. SUPER NACHOS!
Notes
  1. If you do not have a fondue pot, a saucepan works just fine.
