Easy Fried Rice

A better than take out version of Chinese-style fried rice! Just a few simple ingredients pack a punch of flavor to the dinner table.

Ingredients

  • 1 tablespoon sesame oil
  • 4 cups cooked white rice
  • 1 white onion diced
  • 2 cups frozen mixed vegetables or peas and carrots
  • 2 eggs, beaten
  • cup soy sauce
  • ¼ teaspoon ginger
  • 1 teaspoon garlic powder
  • 3 green onions optional

Instructions

  1. Add oil to a large wok or skillet and saute the onion and mixed vegetables for 3-4 minutes until cooked through. *(see note for even speedier process) Slide the veggies to the outer area of the wok. To the cleared area, pour the beaten eggs and cook for about 1 minute, until set.  With a spatula, scramble the eggs and mix it in with veggies.

  2. Add rice to pan. Pour the soy sauce over the rice and stir over medium heat for about 8 minutes until browned. Sprinkle with ginger and garlic powder and stir another 1-2 minutes. Remove from heat and stir in green onions, if desired. (See note to make this a main dish.)

Recipe Notes

*To speed up the cooking time of the vegetables, microwave the mixed vegetables for 4 minutes before adding to the wok. Once adding to the wok, stir fry the mixed vegetables and onion for 2 minutes.

To make a main course meal, add cooked chicken (pictured) (bacon, tofu or ham) when adding the rice.
