Course Snack
Servings 6

Ingredients

Banana Layer

  • 1 1/2 cups bananas, sliced *(see note)
  • 1/4 cup simple syrup see note
  • 1/4 cup milk
  • 1 teaspoon lemon juice

Strawberry Layer

  • 1/2 cup strawberries, sliced
  • 1 cup Greek vanilla yogurt
  • 1/4 cup simple syrup see note
  • 2 teaspoons lemon juice

Instructions

  1. In a blender, add all ingredients for the banana layer.

  2. Divided half of banana mixture, into 6 ice pop molds. Put into the freezer for about 30 minutes. Pour the remaining mixture into a pourable container and refrigerate.

  3. Meanwhile,  in blender, puree all the ingredients for the strawberry layer.

  4. Layer the strawberry mixture on top of the banana mixture. Freeze 30 minutes.

  5. Top with remaining banana mixture. Repeat freezing process. Then add the final layer of strawberry mixture, and freeze until solid.

Recipe Notes

For simple syrup:  Pour equal parts water and sugar in a saucepan. Heat the ingredients until the sugar has dissolved. Stir the simple syrup and place the saucepan over medium heat. Once mixture is clear, remove from the heat.

*I've also used frozen bananas for this recipe...makes the banana layer super creamy!
