One pan is music to my ears. Fuss-free and virtually no-clean up. An easy dinner for an easy weeknight! Big taste for my big family! I even have some “me time” while it bakes in the oven. While the honey and garlic coating glazes and caramelizes everything to perfection, I have time to pay bills, clean the microwave, and throw a load of laundry in the washing machine. WAIT! that’s not “me time”! But it’s extra time, and I’m all about that. No more juggling a million and one pots and pans on the stove, no more timing everything just right. This is the way to a less complicated life, and to make things even better it tastes magnificent.

 

 

 

 

 

 

 

One Pan Honey Garlic Chicken

Ingredients
  1. •3 tablespoons olive oil, divided
  2. •2 tablespoons unsalted butter, melted
  3. •2 tablespoons honey
  4. •2 tablespoons brown sugar
  5. •1 tablespoon Dijon mustard
  6. •3 cloves garlic, minced
  7. •1/2 teaspoon dried oregano
  8. •1/2 teaspoon dried basil
  9. •Kosher salt and freshly ground black pepper, to taste
  10. •16 ounces petite potatoes, halved
  11. •4 boneless, skinless chicken breasts
  12. •24 ounces broccoli florets
  13. •2 tablespoons chopped fresh parsley or cilantro leaves
Instructions
  1. Preheat oven to 400 degrees F. Lightly spray a baking sheet with nonstick spray.
  2. In a small bowl, whisk together 2 tablespoons olive oil, butter, honey, brown sugar, Dijon, garlic, oregano and basil; add salt and pepper, to taste. Set aside.
  3. Place potatoes onto the prepared baking sheet, spreading the potatoes so they cover the entire pan. Drizzle with remaining 1 tablespoon olive oil and season with salt and pepper, to taste. Place potoatoes into the oven and roast for 10 minutes. Remove from oven, and push potatoes to side. Add the chicken to the baking pan and brush with the honey mixture.
  4. Return to the oven and roast until the chicken is completely cooked through, about 30 minutes*. Add the broccoli during the last 10 minutes of cooking time.
  5. Garnish with parsley or cilantro, if desired.
Notes
  1. Cooking times may vary depending on the thickness of the chicken.
