Spring fever is a wonderful thing! Just makes you want to eat something light and healthy, like this heavenly lemon pepper chicken. There is something surprisingly refreshing about lemons, and I wanted tonight’s dinner to be just that…a spring-inspired tasty meal. This recipe also has a bit of honey, making it even more irresistible. But wait, you don’t have to worry about self-control, did I mention, its healthy too! Yea, it’s got it all, I especially like that you bake it in the oven. I love oven dishes, because it makes clean up a snap. This is a perfect meal for company, because it’s so easy, but oh so yummy!
Easy Baked Lemon Pepper Chicken

Ingredients
- 4 boneless skinless chicken breasts
- 3 tablespoons butter
- ground pepper (to taste)
- ⅓ cup chicken broth
- 4 tablespoons fresh lemon juice
- 1 tablespoon honey
- 2 teaspoons minced garlic
- 1 teaspoon Italian seasoning
- salt and pepper (to taste)
- optional: fresh parsley and lemon slices for garnish
Instructions
- Preheat oven to 400 degrees. Grease a baking sheet. (I used a stoneware pan.)
- Melt butter in a large skillet over medium heat. Add chicken. Grind fresh pepper (to your liking) to one side of the chicken.
- Cook chicken 3 minutes on each side just until lightly browned. Transfer chicken to prepared baking sheet.
- In a small bowl whisk together chicken broth, lemon juice, honey, garlic, Italian seasoning, and salt and pepper. Add mixture to the skillet with butter and simmer for 1 to 2 minutes.
- Pour the sauce over chicken. Bake 20-30 minutes until chicken is cooked through. Every 5-10 minutes spoon the sauce from the pan over the chicken.
- Garnish with fresh parsley and lemon slices if desired and serve.
