Chicken and broccoli are mainstays at our house…so what could be better than the two together in a simple stir fry. If you prefer, feel free to add more veges, or change up the
chicken for beef, shrimp or tofu. Sometimes when I pull out the wok…I also pull out all the things in the fridge that I want to use up. But tonight I just wanted to keep it simple, and stayed with the broccoli. And that was fine with Trevor, because he doesn’t like it when I get too crazy with all the extra “stuff”. When the kids were little, I told them they would get grand prize if they cleared everything on their plate. Well, grand prize never really consisted of much, if anything at all. But to this day, I still hand out the infamous and imaginary grand prize to the one who likes my meal the best. It was a dead heat tie for grand prize tonight! Everyone went for seconds.


- •1 pound boneless, skinless chicken breasts, cut into 1-inch chunks
- •12 ounces linguine
- •16 ounces broccoli florets
- •1 tablespoon olive oil
- 1 tablespoon cornstarch
- 2 Tablespoons water
- •2 tablespoons chopped fresh parsley leaves
- •1/2 teaspoon sesame seeds
- For the sauce
- •1/4 cup reduced sodium soy sauce
- •2 tablespoons hoisin sauce
- •1 tablespoon brown sugar, packed
- •1 tablespoon freshly grated ginger
- •2 cloves garlic, pressed
- •1 teaspoon sesame oil
- •1 teaspoon Sriracha, optional
- •In a small bowl, whisk together soy sauce, oyster sauce, brown sugar, ginger, garlic, sesame oil and Sriracha; set aside, reserving 2 tablespoons.
- •In a large bowl, combine reserved 2 tablespoons soy sauce mixture and chicken; set aside.
- •In a large pot of boiling salted water, cook pasta according to package instructions. Within the last 2 minutes of cooking time, add broccoli; drain well.
- •Heat olive oil in a large skillet or wok over medium high heat. Add chicken to the skillet and cook until golden, about 2-3 minutes. Add remaining soy sauce mixture.
- Mix cornstarch and water until will blended, and add to the sauce mixture.
- Add brocolli until heated through.
- Serve over hot pasta.
- •Serve immediately, garnished with parsley and sesame seeds, if desired.
- You may substitute beef, shrimp, or tofu for the chicken.
