Mmmm! You gotta love grilling in the summer. Nothing beats the barbequed taste of food that has been thrown on the grill. I love the flavor of lime and it brings just the right balance to this Cajun chicken. Cilantro gives it a nice, extra zing, but sometimes in a pinch I add parsley. Just slap this chicken on the grill with some corn on the cob, and you’re taste buds will be saying mmmm, delicious!

Grilled Cajun Lime Chicken

Ingredients
- 4-6 boneless skinless chicken breasts
- juice of 3 limes, plus additional lime wedges for serving
- Chopped cilantro or parsley, if desired
- Cajun Rub
- 1 teaspoon salt
- 1 teaspoon garlic powder
- 1½ teaspoon paprika
- ½ teaspoon pepper
- ½ teaspoon onion salt
- ½ teaspoon cayenne pepper
- heaping ½ teaspoon dried oregano (you can substitute Italian seasoning)
- ¼ teaspoon red pepper flakes
Instructions
- Grease and preheat grill to medium-high. In a small bowl whisk together all spices.
- In another small bowl, add the lime juice.
- Dip chicken in the lime juice, and turn to coat. Sprinkle Cajun rub all over all of the chicken being sure to coat all sides.
- Grill chicken for 8-10 minutes on each side until cooked through. Serve with lime wedges and freshly chopped cilantro or parsley if desired.
