What do you do when you are stranded at home in an ice storm? You make the most sweetest, scrumptious breakfast ever. Then you sit back and enjoy the beautiful ice hanging from the trees. When life throws you lemons, you make caramel apple French toast. I bet you think I love this French toast, because of the sweet caramel sauce, nope, not it. Then it must be the cinnamon apples that smother the cinnamon flavored toast, no siree, but you’re getting close. It’s the fact that I can use up all the stale bread, and turn it into an amazing masterpiece. You see, I have this problem of not letting things go to waste. I have empty ketchup bottles in my refrigerator. When I make soup, I rinse out the ketchup residue so I can add the ketchup water to soup. Yea, my problem runs deep. So when I make stale bread disappear, I’m one happy camper!
- 1-2 medium apples, peeled and sliced
- ¾ cup brown sugar
- 4 tablespoons butter
- ¼ teaspoon vanilla
- ½ teaspoon cinnamon
- 6 slices white bread
- 2 eggs, lightly beaten
- ½ cup milk
- ⅓ cup flour
- ¼ teaspoon vanilla
- ½ teaspoon cinnamon
- 2 Tablespoons butter
- Optional: powdered sugar
- Add apple slices, brown sugar, and butter to a cast iron skillet or a medium sauce pan. Cook over medium low heat until brown sugar has dissolved and butter has melted. Add vanilla and cinnamon and reduce heat to simmer, cook 6-8 minutes longer. Remove from heat and allow to cool slightly and thicken while you prepare toast.
- In a large bowl whisk together eggs, vanilla, milk, and cinnamon. Stir in flour and whisk until smooth. Add one slice of bread in the mixture, coating both sides. Lift the bread out of the liquid and allow to drip off excess. Melt butter in large skillet. Cook toast over medium heat 1-2 minutes until lightly browned, then flip and cook other side 1-2 minutes. Repeat with remaining bread slices. Top with apple-caramel mixture. Sprinkle with powdered sugar if desired.
