I love taking salads to work for lunch.  The other day I was ravenously devouring this salad as the accountant walked by my desk and stated, “that’s a nice looking salad”. I came up for air, and sat back and thought it IS a nice looking salad, so colorful and vibrant.  I love adding apples and mandarin oranges to a salad; they give it a burst of zing.  It’s just what you need on a cold winter day. Believe me, winter doesn’t have to be all about comfort foods. A bright and cheery salad is a great pick me up. 

Winter Chopped Kale Salad

Ingredients
  1. Salad
  2. 1/2 cup tricolor dry quinoa, cooked according to package directions
  3. 6 cups slightly packed chopped kale, Remove thick ribs before chopping
  4. 2 apples, cored and chopped *
  5. 3 mandarin oranges, peeled and sectioned
  6. 1 cup walnuts, roughly chopped
  7. 1/2 cup dried cranberries
  8. 4 oz blue cheese, crumbled
  9. Dressing
  10. 1/2 cup olive oil
  11. 1/4 cup fresh lemon juice
  12. 2 Tbsp honey
  13. 1 1/2 tsp dijon mustard
  14. Salt and pepper to taste
Instructions
  1. Add chopped kale to a large salad bowl. Add apples, oranges, quinoa, walnuts and cranberries. Add blue cheese and toss just lightly.
  2. Add all of the dressing ingredients to a jar and shake. Serve with salad.
Notes
  1. *You may prefer to dip apples in a lemon and water mixture to prevent browning.
