I love taking salads to work for lunch. The other day I was ravenously devouring this salad as the accountant walked by my desk and stated, “that’s a nice looking
salad”. I came up for air, and sat back and thought it IS a nice looking salad, so colorful and vibrant. I love adding apples and mandarin oranges to a salad; they give it a burst of zing. It’s just what you need on a cold winter day. Believe me, winter doesn’t have to be all about comfort foods. A bright and cheery salad is a great pick me up.

Winter Chopped Kale Salad

Ingredients
- Salad
- 1/2 cup tricolor dry quinoa, cooked according to package directions
- 6 cups slightly packed chopped kale, Remove thick ribs before chopping
- 2 apples, cored and chopped *
- 3 mandarin oranges, peeled and sectioned
- 1 cup walnuts, roughly chopped
- 1/2 cup dried cranberries
- 4 oz blue cheese, crumbled
- Dressing
- 1/2 cup olive oil
- 1/4 cup fresh lemon juice
- 2 Tbsp honey
- 1 1/2 tsp dijon mustard
- Salt and pepper to taste
Instructions
- Add chopped kale to a large salad bowl. Add apples, oranges, quinoa, walnuts and cranberries. Add blue cheese and toss just lightly.
- Add all of the dressing ingredients to a jar and shake. Serve with salad.
Notes
- *You may prefer to dip apples in a lemon and water mixture to prevent browning.
