My son is a big buffalo chicken fan. He ordered a flatbread chicken sandwich at a local restaurant, and he absolutely loved it. He kept telling me I needed to make it at home. A couple of months passed and we went back to the restaurant so I could try to do a copy-cat of this famous chicken sandwich that got rave reviews. Unfortunately, it was no longer on the menu. WHAT!!??.. Why would you take something so scrumptious off the menu?…Well, I drilled my son on what was on this sandwich. He only told me flatbread and scumptious melted cheese. So I improvised and went to work on re-creating a Buffalo Chicken Flatbread Sandwich. In addition to the cheese, I added some crisp lettuce, sizzling bacon, red onion and blue cheese dressing. I hit a home-run, because everyone loved it. 

Buffalo Chicken Flatbread Sandwiches

A spicy buffalo chicken breast, served on flatbread with melted cheese and your favorite toppings.

Ingredients

  • 4 slices Bacon
  • 4 pieces 6 ounces each chicken breast boneless, skinless
  • Salt and pepper
  • 1 teaspoon sweet paprika , 1 /3 palm full
  • 1 teaspoon chili powder , 1/3 palm full
  • A drizzle extra-virgin olive oil
  • Sauce for chicken:
  • 2 tablespoons butter
  • 1/2 cup 4 ounces, cayenne pepper sauce, I used Frank's Red Hot
  • Bib or leaf lettuce leaves
  • 4 slices flatbread
  • 4 Tablespoons Blue Cheese Dressing or Ranch, Choose your favorite
  • Small red onion , thinly sliced
  • 8 ribs celery , cut into sticks
  • 2 large carrots , peeled and cut into sticks
  • 4 slices Provolone Cheese or Hot Pepper Cheese

Instructions

  1. Fry bacon and set aside.

  2. Heat a large nonstick skillet over medium high heat. Season chicken with salt, pepper, paprika and chili powder. Drizzle breast with a little extra virgin olive oil to coat. Pan grill chicken breasts 5 minutes on each side. Cover with a lid and cook for an additional 15 minutes.

  3. Heat an oven safe glass bowl over low heat and melt butter in the bowl. Add hot sauce to the butter and combine. When the chicken breasts are done, remove from pan and add to the bowl and coat evenly with hot sauce mixture.

  4. Spread each flatbread with 1 Tablespoon of Ranch or Blue Cheese Dressing. 

  5. Place chicken breasts on top of flatbread.  Add a slice of cheese. Place sandwiches on a broiler pan, and broil just until cheese melts, about 1 minute.


  6. Top with lettuce. red onion, and bacon.

  7. Serve with celery and carrot sticks.

Recipe Notes

If you have any non-buffalo sauce lover's in the family, just don't add the chicken to the sauce. They will still love these sandwiches!
