I got a request from my son to add Chocolate Chip French Toast to the blog. And why not?…the whole family loves French Toast.  It’s fun to experiment with different flavors and toppings.  I especially love Caramel Apple French Toast, but I’m still trying to decide on which is my favorite. Because this one is right up there with the best of the best. It’s something about the hot incredible Brioche bread and the ooey-gooey chocolate chips that make it irresistible.  During the weekdays, it’s fend for yourself for breakfast.  Weekday mornings are a little hectic.  Everyone is moving fast and going there own direction… I have banana grabbers, pop-tart toasters and cheerio pourers.  So when the weekends come around, french toast is a pleasurable treat the whole family enjoys!

 

Chocolate Chip Brioche French Toast

A delicious way to eat chocolate chips for breakfast! The Brioche bread is incredible.  This is a family favorite. Both adult and kid-approved!

Ingredients

  • 10 large eggs
  • 1-1/2 cups fat-free half-and-half or 1% milk
  • 1 tsp vanilla extract
  • 1 loaf sliced Brioche Chocolate Chip bread
  • Organic oil
  • Sifted confectioners' sugar
  • mini chocolate chips as desired

Instructions

  1. In a shallow 9-inch square dish, whisk together the eggs, half-and-half, and vanilla.

  2. Heat a griddle over medium heat. Add about 2 tbsp of the oil to the griddle and heat until simmering. Be careful to not let the oil burn. Dip both sides the brioche slices in the egg mixture until well coated.

  3. Add the dipped brioche slices to the griddle and cook for 2 to 3 minutes on each side, until browned and cooked through. If you are cooking for a large crowd (like me), you can cook the French toast in batches and keep it warm in the oven on a baking sheet. Add more oil as needed for each batch.

  4. Serve hot with a light dusting of confectioners' sugar, chocolate chips and top with butter. Try strawberries, whipped cream and strawberry syrup as your topping.
