We’re getting the one-two-punch of winter on the east coast: the cold, freezing temps and then the snow. When life gives you snow, stay in, bundle up and enjoy this deliciously rich and creamy stove-top cocoa. It makes winter sooo much more bearable! You know how some things take you right back to the good ol’ days of childhood. The fragrant smell of hot cocoa simmering on the stove reminds me of my sled-riding bonanza days. We would fit about 8 people, yeah 8 (I kid you not) on the toboggan and go down the best hill ever, consisting of air-borne-jumps and across frozen creeks. Good Times!! And of course we kept warm with delicious creamy hot cocoa!
Creamy Hot Cocoa
Homemade rich and creamy hot cocoa simmered on the stove! Lactose free....made with almond milk...and just the perfect amount of sugar!
Ingredients
- 1/3 cup unsweetened cocoa powder
- 1/3 cup white sugar
- 4 1/3 cup almond milk, divided may use dairy milk if you prefer
- dash of salt
- 3/4 teaspoon vanilla extract
- additional milk, if desired
Instructions

Combine the cocoa and sugar in a saucepan over medium-low heat. Add a dash of salt and 1/3 cup milk. Stir continuously until hot and steamy. Bring to a a boil, and immediately turn down to a simmer.

Slowly stir in additional milk and heat until very hot, but not boiling! Remove from heat and add vanilla. Divide between 4 mugs. If desired, add additional milk to cool it to drinking temperature. Also, great topped with whipped cream or marshmallows and chocolate syrup.
Recipe Notes
Sometimes I add 4 Hershey miniature chocolate bars with the cocoa for a richer chocolate flavor.
