Who knew a simple, little turkey muffin could be so tasty? They are similar to meatloaf, but much, much better!  Not a meatloaf fan? I understand, but I’m calling all you meatloaf haters to try these. Don’t let the humble appearance turn you away.  The muffin tins allow a crispy coating on the outside, and the mozzarella is well, cheesy delicious. Don’t get me started, but I’ll just say…. the cheese makes these muffins crazy good.

My husband found this recipe years ago, and I’ve tweaked it along the way. He says it’s his favorite ground turkey meal! We especially love them in the mini muffin tins (although the large muffin tins work just as well).  It may be psychological or perhaps it’s the kid in me, but there’s just something about the minis that make them fun and irresistible.

Italian Turkey Muffins

Irresistible turkey muffins with Italian flair--perfect for a no-fuss weeknight dinner or a grab-n-go meals! They are so easy to prepare and healthy too! You can't eat just one.

Cook Time 25 minutes
Total Time 30 minutes
Servings 6

Ingredients

  • 1.50 lb. Ground Turkey
  • 1 egg beaten
  • 1 can diced tomatoes drained
  • 1/4 cup Panko crumbs
  • 1/2 cup Parmesan cheese
  • 1 bell pepper minced
  • 2 cloves garlic minced
  • 1/4 teaspoon crushed red pepper
  • 1 teaspoon Italian seasoning
  • 1/2 teaspoon oregano
  • 1/2 cup mozzarella cheese, grated

Instructions

  1. Preheat oven to 400.
  2. Mix all ingredients (except mozzarella cheese) in large bowl. Scoop mixture into muffin tins. (I prefer the mini-muffins, but large works fine.) Top each with a sprinkling mozzarella

  3. Bake for 25 minutes or until a light crust has formed on top of the muffin.

Recipe Notes

For easier clean-up, spray the muffins tins generously with cooking spray.

    Yes, I have to say that as someone not typically a fan of meals using turkey as a beef replacement, this dish is by far my favorite!
