“It cures what ails you!” That’s a saying we have around the house.  So why on earth would PB&J French Toast Sticks come to mind as a cure?? My son picked up some crazy germs at school and came down with the flu and strep (at the same time!) “When ya going to make PB&J French Toast Sticks?”, he kept repeating. Yep, without a doubt this is what the boy needed and wanted! In fact…that peanut butter streusel, those crispy baked slices of Brioche, the intense flavor of raspberry jam, topped with fresh berries, and a side of syrup for extensive dipping was just what the doctor ordered! Yikes!!…something so amazing and indulgent as these French Toast Sticks should be on everyone’s wish list—or better yet—on the must make-list!

PB & J French Toast Sticks

Ingredients

For the Peanut Butter Streusel:

  • 3 tablespoons Peanut Butter
  • 3 tablespoons light brown sugar
  • 1/4 cup old-fashioned rolled oats
  • 1/4 cup white chocolate chips (May want to have some extra for topping)

For the French Toast Sticks:

  • 4 slices Texas Toast or Brioche or French bread (I used Chocolate Chip Brioche)
  • 3 large eggs
  • 1/2 cup milk
  • 1 teaspoon vanilla
  • 1/2 teaspoon ground cinnamon
  • 1/2 cup raspberry jam (or your favorite flavor jam)
  • serve with fresh fruit, such as raspberries, blueberries, bananas

Instructions

Peanut Butter Streusel

  1. In a small bowl, mix together all the streusel ingredients and set aside.

French Toast Sticks

  1. Preheat oven to 350 degrees F. Spray baking sheet with non-stick cooking spray. Set aside. 

  2. Cut the bread into 1/3 strips, and set aside.

  3. In a large shallow dish, whisk together eggs, milk, vanilla, and cinnamon. Dunk bread sticks into batter, let excess drip off, then place onto prepared baking sheet. Bake for 9 minutes.

  4. After 9 minutes, remove from oven and flip the sticks over, spread jam on the sticks. Then sprinkle  the peanut butter streusel over the jam. Place the pan back in the oven and bake for  10 minutes, or until sticks are golden and streusel is set. Remove from the oven and Serve with additional chocolate chips, fresh fruit. and syrup, if desired.
