Light and flavorful oatmeal pancakes are the perfect way to add a little more protein to your morning! Break out the blender, and let’s make some crazy, easy batter. Yep, you heard correct. Your breakfast time is about to become even easier. No whisk, no bowls…simply blend and pour right from the blender! 
 
And now let’s talk syrup…..buttery, caramel with a touch of sea-salt. Mmmm! So good. The best part is it’s extremely easy and quick to make!  (The syrup is not limited to pancakes try it on french toast, crepes, brownies, ice cream. YUM!)

Oatmeal Pancakes with Salted Caramel Syrup

A simple breakfast, packed with a little extra protein and topped with an incredible salted caramel syrup.

Ingredients

Oatmeal Pancakes

  • 3/4 cup milk
  • 3/4 teaspoon white vinegar
  • 1/2 cup all-purpose flour
  • 1/2 cup rolled oats
  • 1 tablespoon white sugar
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 large egg
  • 2 tablespoons vegetable oil
  • 2 teaspoons vanilla extract

Salted Caramel Syrup

  • 1/2 cup corn syrup
  • 4 tablespoons butter
  • 1/2 cup brown sugar
  • 1/2 cup heavy whipping cream add more to thin if needed
  • 1/2 teaspoon sea salt
  • 2 teaspoons vanilla

Instructions

Oatmeal Pancakes

  1. Stir together milk and vinegar and allow to rest for 5 minutes
  2. Place oats into blender. Pulse until oats have become like flour, a fine powder.

  3. Add flour, sugar, salt, baking powder & soda and pulse until combined. Add egg, vegetable oil and vanilla. Blend until smooth.

  4. Heat a lightly oiled griddle or large non stick skillet on medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides, serve hot with Salted Caramel Syrup.

Salted Caramel Syrup

  1. In a small saucepan, add the syrup, sugar and butter. Heat on medium low heat until dissolved.  Stirring constantly about 5 minutes.

  2. Once sugars are dissolved cook another 5 minutes then slowly pour in the whipping cream. Stir to combine. Cook 1-2 minutes.

  3. Remove from the heat and add the sea salt and vanilla.  Serve over pancakes, crepes, brownies, cake, ice cream, etc.  YUM!
