Oatmeal Pancakes with Salted Caramel Syrup
A simple breakfast, packed with a little extra protein and topped with an incredible salted caramel syrup.
Ingredients
Oatmeal Pancakes
- 3/4 cup milk
- 3/4 teaspoon white vinegar
- 1/2 cup all-purpose flour
- 1/2 cup rolled oats
- 1 tablespoon white sugar
- 1 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 large egg
- 2 tablespoons vegetable oil
- 2 teaspoons vanilla extract
Salted Caramel Syrup
- 1/2 cup corn syrup
- 4 tablespoons butter
- 1/2 cup brown sugar
- 1/2 cup heavy whipping cream add more to thin if needed
- 1/2 teaspoon sea salt
- 2 teaspoons vanilla
Instructions
Oatmeal Pancakes

Stir together milk and vinegar and allow to rest for 5 minutes

Place oats into blender. Pulse until oats have become like flour, a fine powder.

Add flour, sugar, salt, baking powder & soda and pulse until combined. Add egg, vegetable oil and vanilla. Blend until smooth.

Heat a lightly oiled griddle or large non stick skillet on medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides, serve hot with Salted Caramel Syrup.
Salted Caramel Syrup

In a small saucepan, add the syrup, sugar and butter. Heat on medium low heat until dissolved. Stirring constantly about 5 minutes.

Once sugars are dissolved cook another 5 minutes then slowly pour in the whipping cream. Stir to combine. Cook 1-2 minutes.

Remove from the heat and add the sea salt and vanilla. Serve over pancakes, crepes, brownies, cake, ice cream, etc. YUM!
